Wholemeal Starter Instructions
In a large jar weigh 30g of wholemeal flour and 75g of cold water and mix well (organic flour and filtered water where possible). Add the sachet of dehydrated starter and stir to combine. It will remain a little lumpy at this stage. Cover with your muslin cloth and secure with an elastic band. Leave for 24 hours at room temperature and stir occasionally.
Mix together 50g of flour and 50g of water, add to the jar and stir. We call this feeding our starter! Re-cover and leave for 24 hours.
Feed with 80g of flour and 80g of water. Re-cover and leave for 24 hours.
Your starter should now be strong and very active. Go ahead and name him or her!
Now that your starter is active, it can be used in sourdough baking. However, you will need to schedule a feed for optimal results. More on this and the perfect time to use your sourdough starter can be found here.
