Sourdough Gingerbread

The perfect man does exist …in the form of these soft, spicy and oh-so-festive sourdough gingerbread men.

We’ve added plenty of ginger and black pepper to our gingerbread men but you can spice them up as much or as little as you like.

Perfect for making with the family and getting Children Involved in baking this Christmas. It’s a super easy dough and the decorating is great fun.

  • 300g All-Purpose Flour

  • 175g Golden Caster Sugar

  • 125g Unsalted Butter

  • 100g Sourdough Starter Discard

  • 4 tsp Ground Ginger (to taste)

  • 2 tbsp Golden Syrup

  • 1 Large Egg

  • 1 tsp Bicarbonate of Soda

  • 1 tsp Cinnamon (to taste)

  • 1 tsp Cocoa (optional)

  • Black Pepper (optional)

  • Sea salt

  • Icing, sprinkles, sweeties to decorate


Step 1)

Preheat your oven to 190°C / 170°C Fan.

Line two trays with baking parchment.

Sieve the flour into a bowl and add the sugar, bicarb and all of the spices (to your taste) and stir to mix.

Add the sourdough discard and butter (melted), mix.

Add the golden syrup and one egg (beaten), mix.

Bring together to form a soft, cohesive dough.

Step 2)

Roll out on a floured surface to around 1/2 cm / 1/4 inch thick.

Cut out your chosen shapes and transfer to prepared baking trays.

Keep bring together and re-rolling the dough until used up.

Step 3)

Bake for around 10-12 minutes for a softer biscuit, and 12-15 minutes for more crunch. The size of the biscuit will also impact the cooking time.

They should always be slightly soft when removed from the oven but will firm up when cooled.

Allow to cool completely and then decorate however you wish!
